Rainbow Meringue Drops...

These rainbow meringue drops are so much fun to make and taste delicious too with a marshmallow surprise in the middle!. They are great for a little naughty snack, but they also look amazing on cakes for decoration too. They are so quick and easy to make and everyone  can get involved. INGREDIENTS:
  • 4 egg whites
  • Caster sugar
  • Pinch of salt
  • 1 tsp vinilla extract 
  • Mini marshmallows
  • Food colouring
  • 100s & 1000s
METHOD:

Step 1:
Preheat your oven to 100c. Separate your egg whites from the yolks. Once this is done weigh your egg whites and double the amount and that Is how much sugar you will need.

Step 2:
Whisk the egg whites and salt. Start on a low speed and gradually move up to a higher speed when big air bubbles appear and starts to become foamy. Once thick and soft peaks start to form gradually add your sugar In, In spoonfuls. Once all the sugar has been incorporated It should not feel grainy and It should be shiny and glossy If there are grain of sugar just keep whisking for a father 5 minutes. Add the vanilla extract.

Step 3:
​Once you are happy with the conisitancey of your meringue set to one side and prepare your piping bag and tray. To prepare your piping bag place a nozzle of your choice at the bottom of your piping bag, fold down the edges of your piping bag about half way and with a paintbrush and food colouring paint lines down the sides of the bag to create the rainbow effect. On a baking tray place marshmallows about an inch apart from each other and pipe over the pulling up as you finish. Before baking sprinkle over with 100s & 1000s and bake for 30-35 minutes. Once baked they should pull away from the baking paper If not put them back into the oven for a few more minutes.
