Chocolate Fudge Cake Balls...

These Chocolate fudge cake balls are very easy to make and are they are very effective. They are the perfect size to put into a picnic. Or you could make these for a party by making them into cake pops. Read more to find our how to make these delicious treats...

​INGREDIENTS:
  • 100g unsalted butter or soft margarine
  • 100g caster sugar
  • 2 eggs
  • 80g self-raising flour
  • 20g cocoa powder
  • 1 tbsp milk, plus extra if needed
  • 150g ready made chocolate fudge icing
  • 250g dark chocolate cake covering
  • 50g white chocolate

METHOD:

Step 1:

preheat the oven to 180 degrees. Grease tin and line with baking parchment. with an electric whisk, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well between additions, until smooth and creamy.

Step 2:

Sift together the flour cocoa powder, and baking powder and fold into the cake batter. Mix in enough milk to loosen the batter to a dropping consistency. Spoon into the tin and bake for 25 minutes until the surface is springy to the touch.
Step 3:
Test with a skewer and then turn out onto a wire rack to cool completely. Whiz the cake in a processor until it looks like bread crumbs. Put 300g in a bowl.  Add the frosting and blend together to a smooth, uniform mix. Using dry hands, roll the cake mix into balls, each the size of a walnut. Put the balls on a plate and refrigerate for 3hrs or freeze for 30 mins.

Step 4:

Coat the balls  in the melted cake covering. Work quickly and if they start to break up, coat one at a time. Using two forks, turn the balls in the chocolate until covered. Remove allowing excess to drip. Transfer the coated balls to the baking trays to dry. Continue to coat all of the balls.

Step 5:
Melt the white chocolate in a bowl placed over a pan of boiling water. Drizzle the white chocolate over the set covered cake balls with a spoon or a piping bags with a small hole cut to decorate. Leave the white chocolate to dry completely before transferring them to a serving plate. The cake balls can be kept in an airtight container for 3 days.
